If you are ready to use your culinary skills in an innovative and fast-paced environment to create magic at our impressive Parks Signature Fine Dining restaurants, then apply for our Signature Fine Dining/Demi Chef role today!Responsibilities : Use cooking techniques such as braising, baking, roasting (oven or rotating spit), and high-level skillet/sauté workAbility to inventory product, read menus (BEOs, Restaurant Orders), and estimate food requirements to create a production planMay prepare sauces “a la minute” using advanced sauce preparation techniquesPrepare confits and compotes, and create seasonings, cures, and rubsMay bone and clean shellfish, cut, trim, or grind meats, fish, or poultryMust demonstrate ability to present and discuss menu item preparation with Dinner Cooks, Order/Grill Cooks, and GuestsOperate all kitchen equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettlesMaintain standards and specifications related to food preparation and food handling daily, understand measurement requirementsUphold food safety and sanitation guidelines, including maintaining proper temperature requirements and HACCP (Hazard Analysis and Critical Control Points) procedures while understanding the science in cooking temperaturesResponsible for checking and maintaining proper temperatures throughout preparation, cooling, holding, and serving of food items, including adjusting thermostat controls to regulate temperaturesObserve, test, and ensure food is cooked and plated to proper standardsClean kitchen equipment Ability to handle special dietary requests and work with Guests requiring special requests due to dietary concerns Basic Qualifications : You must be at least 18 years of age to be considered for this roleMinimum of 2 years of experience in culinary field with a focus on high volume productionCulinary education degree or equivalent experience required with less than 2 years of experience in culinary fieldStrong communication and organizational skills; proven leadership and interpersonal skills with an ability to lead a team in a very fast-paced environment Adept at troubleshooting and can calmly handle difficult situationsPassion for Culinary and delighting our guests with food!Proven ability to create, read, and understand recipesUnderstand the purpose of the knife and when to use itExhibit a positive, friendly, and helpful attitude to our Guests and fellow Cast MembersDemonstrate excellent guest service skills and able to give appropriate service recoveryDemonstrate passion and enthusiasm for working in the kitchenProven knowledge of culinary techniques and terminologyFood Safety Certification or equivalentAbility to work with technology (plate costing buffet system, CAFÉ system, KDS, Workbrain)Must be flexible and able to work a variety of shifts, including days, nights, weekends, holidays and special eventsPreferred Education : Vocation School training or High School certificationCulinary Education Degree, Certification from CIA, or equivalentBasic wine knowledgeAdditional Information : SCHEDULE AVAILABILITYOur Theme Parks and Resort Hotels operate 24 hours a day, 365 days a year and some shifts may start as early as 5:00am while some may end as late as 3:00am, 4:00am or 5:00am Must be flexible and able to work a variety of shifts including days, nights, weekends, holidays and special events.SUBMITTING YOUR APPLICATIONAfter clicking “Apply Now” below, the employment application will open in a new window.
